It’s cheesy but it’s grate

It all began in a small, windowless Birmingham hotel room. A big weekend culminated in a Sunday morning where I teared up at Nigel Slater’s enthusiasm and shared a deeply questionable lunch of three side dishes with Kaf.

Back in the safety of our living room, inspired by our earlier brush with Nigel, we passed the afternoon watching Jamie Oliver’s Comfort Food. His earnest love for pleasant, stodgy food improved those dark, sleepy hours. One recipe in particular stuck with me: his ultimate cheese toastie.


The trick is to butter the toast on both sides before covering it in cheese and frying it on both sides. Then, Jamie says, grate in to the pan itself to cover the exterior with browned dairy goodness.

On a tired Monday afternoon, this glorious sandwich lifted my spirits (and probably my blood pressure)… a happy Monday indeed.
